Chef’s Table: Royal Persian Feast with Paul Young

Persian cuisine is steeped in thousand-year-old traditions from an ancient empire that connected India and China with the West along the silk road. Famous for its creative use of spices like saffron, cardamom, and dried lime, this sophisticated cuisine is also known for using perfumed herbs, a diverse range of ingredients, having complex flavors, and balancing contrasting flavor profiles. Tonight’s fantasy dinner takes place in Persepolis, the ancient lost capital of the Persian Empire from around 500 to 300 BCE. Located in modern Iran and rediscovered in the 1930s, Persepolis is an UNESCO world heritage site that housed a palace complex where royal feasts were held.

 

With this pop-up dinner, we are introducing a new series called “Chef’s Table” where guests are seated right at the kitchen island in the Harvest Market Demo Kitchen. All diners will get a front row seat to where the action is and you can watch your dinner being prepared right in front of your eyes. Each dish will be presented by the chef with notes on ingredients, preparation, flavor profiles, and background information about its cultural history. Cooking techniques and modern shortcuts will be also discussed and all your questions will be answered. Seating is strictly limited to the first 10 reservations.

 

Each course will also be paired with a specially selected wine designed to enhance your dining experience. Here’s what’s on the menu for tonight’s feast:

 

  • Mahiche • Persian braised lamb shank with saffron
  • Ghormeh Sabzi • beef herb stew with spinach and lime
  • Jeweled Rice • Persian rice pilaf with dried fruits and nuts
  • Shirazi Salad • Persian cucumber tomato salad
  • Sholeh Zard • saffron rice pudding
  • Wine pairings all evening long, plus a few surprises!

 

Note: All of our pop-up events are all-inclusive prix fixe dinners. This means you get a multi-course dinner complete with wine and other beverage pairings all evening long for one fixed price.
